Fingerling potatoes

Step 1

Preheat the oven to 230°C. In a pot of salted boiling water, cook the potatoes for 10 min, over medium heat.

Crème fraîche
Chives (fresh)
Lemon

Step 2

Meanwhile, prepare the chive cream. In a bowl, combine : the crème fraîche, minced chives (optional) & lemon zest & juice. Season with salt & pepper.

Step 3

Once the potatoes are tender, drain them.

Step 4

Line a baking tray with parchment paper & add the potatoes. Smash them using the back of a mug or pan. Season with salt, pepper & a drizzle of olive oil. Bake for 15 min at 230°C.

Step 5

Once golden & crispy, remove the smashed potatoes from the oven.

Lambs Lettuce
Smoked salmon

Step 6

Serve the smashed potatoes in a plate with the lamb's lettuce & smoked salmon. Top with the chive cream & re-season to taste. Enjoy !
