Crispy potatoes, a flavorful sauce and delicious salmon...a simple, but luxurious meal!

Step 1
Preheat the oven to 230°C. Cook the potatoes in a pot of boiling water for 10 minutes.
Step 2
While the potatoes are cooking, mix the sour cream, lemon juice, lemon zest, salt & pepper. Optional: Add some chopped chives
Step 3
Drain the potatoes after 10 minutes. (A fork should poke through the skin easily when they're done cooking)
Step 4
Place the potatoes on a sheet of parchment paper and smash them using the back of a pan, a plate, or a cup.
Step 5
Drizzle some olive oil on them and sprinkle with salt & pepper too. Bake for 10 minutes at 230°C.
Step 6
Once the potatoes are golden brown, take them out of the oven.
Step 7
Serve the potatoes with dressed salad, the salmon and sauce. Enjoy!
