Zucchini

Step 1

Wash the zucchini and cut them into 1/2 inch cubes.

Red wine vinegar
Oregano (dried)

Step 2

Mix the vinegar, 2 tablespoons of olive oil (per person), salt & pepper, and oregano in a medium sized bowl.

Step 3

Add the zucchini and mix to coat. Set aside.

Beef (top round steak)

Step 4

In a pan on high heat, add a drizzle of olive oil and the steak. Cook for 2 minutes on each side (add more cooking time depending on how you like your meat cooked).

Step 5

Once the meet is cooked, transfer to a cutting board and let it rest for 5 minutes (letting it rest helps the meat become more tender!)

Cut the steak into slices.
