Raw shrimp (frozen)

Step 1

If you're using frozen shrimp, defrost them by putting them in a freezer bag and placing it in warm water.

White rice (long grain)

Cook the rice. When it's done, rinse and drain and set aside.

Slice the onion.

Almonds (whole, unsalted)

Roughly chop the almonds.

Heat some olive oil in a frying pan. Add the onions and cook for 5 minutes.

Add the almonds, raisins, cardamom and half of the curry, mix together.

Add the rice, salt, pepper and mix again. Cover and cook on very low heat.

In another pan, add the shrimp, and mix with the rest of the curry and the coconut milk. Let it cook for 6 minutes.

Step 9

Serve the rice with the shrimp (Optional: Top with almonds). Enjoy!
