Step 1

Chop the onion.

Garlic

Chop the garlic.

Carrots (fresh)

Step 3

Cut the carrots into 1 inch pieces.

Add a drizzle of olive oil to a large pot on medium heat. Add the onion and cook for 5 minutes, stirring occasionally.

Step 5

Add the carrots, garlic and quinoa and sauté for 5 minutes.

Chicken bouillon (cube)

Step 6

Add 1 cup of stock per person. Season with salt & pepper, cover and cook for 20 minutes on low heat.

Cooked shrimp

Step 7

Add the spinach, shrimp, lemon juice and zest, and cook for an additional 3 minutes.

Step 8

Serve Optional: add some parsley. Enjoy!
