Step 1

If necessary, defrost the shrimp. In a saucepan of boiling salted water, cook the rice according to the package instructions. Drain it when it's cooked.

Cooked shrimp
Pineapple slices
Soy sauce

Step 2

Meanwhile, heat a drizzle of olive oil in a skillet over medium heat. Add the shrimp, drained pineapple, and soy sauce. Stir and cook for 3 to 4 minutes, until the shrimp are well caramelized.

Tomato

Wash and cut the tomatoes into cubes.

Red onion

Peel and dice the red onions.

Cilantro (fresh)

Chop the cilantro, if you have any.

Prepare the tomato salsa. In a bowl, add the tomatoes, onions, and a drizzle of olive oil. Season with salt and pepper, and add the cilantro. Mix everything together.

Serve the rice in a shallow dish with the pineapple shrimp and tomato salsa. Season to taste and garnish with cilantro, if you have any leftover. It's ready!
