Mint (fresh)

Step 1

Wash & roughly chop the mint.

Garlic
Tomatoes (canned, peeled)

Step 2

Heat a drizzle of olive oil in a pan, over medium heat. Add the grated garlic & sauté for 30 secs, while stirring. Add the canned tomatoes, crush them lightly & cook for 5 min.

Cooked shrimp
Mild chile powder, ground (Espelette)

Step 3

Add the shrimp, chopped mint & 'piment d'Espelette' (optional) to the pan. Season with salt & pepper. Stir & simmer for another 5 min, over low heat.

Couscous

Step 4

Meanwhile, boil some water. In a bowl, combine the couscous with salt, peppet & a drizzle of olive oil. Pour the same volume of couscous in boiling water over top. Cover & set aside for 5 min. Fluff the couscous with a fork.

Feta cheese (block)

Step 5

In a plate, serve the couscous with the tomato shrimp.* Top with crumbled feta & fresh mint, if you have some left over. Enjoy ! *Check out our tips for this step
