We may not be able to hit the beach right now, but you can collect some pretty little shells on your plate!
Make sure you have...
Stovetop, Oven, Pot (small), Colander, Baking dish
Step 1
Preheat the oven to 240°C. Cut the broccoli into small pieces.* *Check out our tips for this step
Step 2
Boil the brocoli with the pasta according to the pasta instructions (minimum 8 minutes). Once cooked, drain the pasta shells and broccoli pieces, and set them aside.
Step 3
In a medium sized bowl, add the broccoli, torn up trout, ricotta, and some lemon zest. (Optional: Add some chopped mint.) Season with salt and pepper, and mix.
Step 4
Oil a baking dish. Stuff the pasta with the ricotta-broccoli mixture using a spoon, then arrange it in the dish. Season with salt and pepper and bake for 10 minutes at 240°C.
Step 5
Serve! (Optional: Add some chopped mint on top.) And enjoy!
For a zero-waste meal, add the sliced [brocoli/ cauliflower] stems into your dish or add them to a soup !
