Step 1

Preheat the oven to 200°C. Dice the eggplant and cut the broccoli into florets.

Line a baking tray with parchment paper and add the broccoli, eggplant and chickpeas. Drizzle with olive oil and season with salt and pepper. Bake for 15 min.

After 15 minutes, remove the vegetables from the oven.
