Step 1
Preheat the oven to 200°C. Dice the eggplant and cut the broccoli into florets.
Step 2
Line a baking tray with parchment paper and add the broccoli*, eggplant and chickpeas. Drizzle with olive oil and season with salt and pepper. Bake for 25-30 min. *Check out our tips for this step
Step 3
Cook the quinoa according to package instructions.
Step 4
In a small bowl, mix the peanut butter, juice of the lemon and 1 tsp water per portion.
Step 5
After 25-30 minutes, remove the vegetables from the oven.
Step 6
Serve the quinoa with the roast vegetables and peanut sauce, sprinkled with sesame seeds.
Steam your broccoli before roasting, for more tender veg.
