Cherry tomatoes

Step 1

Cut the cherry tomatoes in half.

Step 2

Break in eggs into a bowl and whisk. Salt and pepper them. Optional: Add some small pieces of butter to the mixture.

White bread (sliced)

Step 3

Toast the bread in a pan with a pat of butter, or in the toaster or oven.

Step 4

In the same pan, melt a dab of butter. Add the cherry tomatoes and sauté for 2 minutes on medium heat. Season with salt and pepper. Set aside.

Step 5

In the same pan add a dab of butter. Pour in the eggs and cook for 4-5 minutes on very low heat while stirring.

Step 6

Place the slices of bread on a plate. Add the scrambled eggs on top, a dollop of cream cheese, the cherry tomatoes and the salad.

Step 7

Add a drizzle of olive oil, salt and pepper, and enjoy!
