Flour (all-purpose)
Baking powder
Sugar (granulated)

Step 1

Preheat oven to 220°C. Sift the flour and baking powder together in a mixing bowl. Add a pinch of salt and the sugar.

Butter (unsalted)

Step 2

Add the softened butter, in pieces, and rub together, using your fingers, until mixture resembles cornmeal.

Milk (whole)

Step 3

Add the milk and mix with a fork to form a dough.

Step 4

On a floured work surface, gently roll the dough into a ball. Be careful not to over-knead it.

Step 5

Roll the dough out, using a rolling pin, until it's 2-3 cm thick.

Step 6

Cut out discs 5-6 cm in diameter using a glass or cookie cutter.

Egg

Step 7

Place on a parchment paper-lined baking sheet and brush with beaten egg yolk (optional).

Step 8

Bake at 220°C for 12-15 minutes, or until tops are golden brown.

Step 9

Remove from oven and let cool for a few minutes.

Step 10

Serve warm with butter (or clotted cream) and jam.
