Step 1

If using frozen scallops, add them to a zippered plastic bag and place it in a bowl of room temperature water.

Finely chop the garlic.

Cut the chorizo into small pieces.

In a pan on high heat, add a drizzle of olive oil and sauté the chorizo and garlic for 2 minutes.

Add the scallops and cook for 2 minutes.

Lower the heat to medium. Add the corn and heavy cream and cook for 3 minutes.

Step 7
