Thermomix, Oven, Baking dish
Step 1
Make the crumble: Add the flour, butter and parmesan to the Thermomix. Mix for 7 seconds on speed 4. Put the sandy mixture in a separate bowl and set aside.
Step 2
Preheat the oven to 180°C. Remove the ends from the leeks* and then cut them into rings. Rinse them in running water to remove any dirt. *Check out our tips for this step
Step 3
Once cleaned and dry, add the leeks to the Thermomix with a pat of butter and cook for 10 minutes at 100°C in reverse mode on speed 1.
Step 4
Then add the crème fraîche, salt, and pepper, and sauté for another 4 minutes (still at 100°C in reverse mode on speed 1.)
Step 5
Place the smoked salmon along the bottom of a baking dish. Spread the cooked leeks on top, and finish by sprinkling the crumble mixture on top.
Step 6
Bake at 180°C for 30 minutes. Serve and enjoy!
For a zero-waste dish, use the discarded leek stalks to make soup ! Rinse well & remove all damaged, dry & yellow parts before adding to your pot with the ingredients of your choosing.
