Pancetta (cubed)

Step 1

Preheat the oven to 180°C. In a hot frying pan, cook the bacon lardons until they are lightly golden.

Whole milk yogurt (plain)

Meanwhile, in a mixing bowl, add: 1 pot of yogurt (keep the pot, it will be how you measure the rest of the recipe), eggs, salt and pepper. Mix.

Add half a yogurt pot of olive or sunflower oil. Mix again.

Baking powder
Flour (all-purpose)

Step 4

Next, add 3 pots of flour and baking powder, and mix.

Onion jam
Shredded cheese
Pancetta (cubed)

Step 5

Blend in the caramalized onions, grated cheese and bacon using a spatula.

Step 6

Pour the mixture into a cake tin and bake for 40 minutes.

Step 7

Insert a knife into the cake towards the end of the cooking, if it comes out "clean", it's ready. Serve as an aperitif or as a meal with some salad.
