Pancetta (cubed)

Step 1

Preheat the oven to 180°C. Heat a frying pan, over hight heat. Add the bacon bits & cook them for 3-4 min. Set aside.

Whole milk yogurt (plain)
Egg

Step 2

Meanwhile, prepare the batter. In a mixing bowl, combine : the yogurt & eggs. Season with salt & pepper.

Olive oil

Step 3

Add the olive oil and stir.

Baking powder
Flour (all-purpose)

Step 4

Add the flour & baking powder. Mix until the batter becomes smooth & homogenous.

Onion jam
Shredded cheese

Step 5

Add the caramelized onions, shredded cheese & bacon bits.

Step 6

Pour the mixture into a loaf tin (we used a 29 x 10 cm dish here) & bake for 40 min.

Step 7

Once the loaf is golden, plant the tip of a knife into the center of the loaf. If it comes out clean, the loaf is ready, otherwise, bake it for another 2-3 min. Serve it for ‘apéro’ or as a main with a side of green salad. Enjoy !
