Baking powder

Step 1

Preheat the oven to 180°C. In a large mixing bowl, mix the flour and baking powder. Form a well in the middle and crack the eggs into it. Season with salt and pepper and mix to combine.

Olive oil
Milk (whole)

Step 2

Add the olive oil, mix, then add the milk and mix again to form a smooth batter.

Shredded cheese
Pancetta (cubed)
Walnuts
Blue cheese

Step 3

Add the shredded cheese, cubed bacon, crumbled blue cheese, and walnuts. (You can reserve a bit of cheese and walnuts for the top of the cake.) Mix, using a rubber spatula.

Step 4

Grease a loaf pan and line it with parchment paper.

Step 5

Pour the batter into the loaf pan and sprinkle the top of the cake with the reserved blue cheese and walnuts. Bake for 40 minutes at 180°C.

Step 6

Remove from the oven, it's ready! Perfect for an apéro, or for dinner with a side salad.
