Ingredients

Make sure you have...

Olive oil (1/2 tsp), 
Water (200 ml)

Utensils

Stovetop, Pot (small), Peeler

Yellow onion

Step 1

Peel & slice the onions into thin strips.

Carrots (fresh)

Step 2

Peel & slice the carrots into rounds.

Step 3

Heat a drizzle of olive oil in a pot, over medium heat. Add the onions & carrots. Sauté for 3-4 min, stirring.

Lentils (dry)

Step 4

Add the lentils to the pot & cook for another 3 min, stirring. Season with pepper & add a bay leaf, if you have some.

Step 5

Add 200 ml of water to the pot* & cook for 15 min, over medium heat. *Check out our tips for this step

Andouille sausage (smoked)

Step 6

After 15 min, add the sausages cut in halves. Cover & leave to simmer for 15 min, over low heat.

Step 7

Serve the sausage & lentils in a plate. Re-season to taste & enjoy !

Recipe tip

For a truly flavoursome dish, we suggest adding a dash of red wine while the lentils cook.
