Yellow onion

Step 1

Peel and mince the onion.

Carrots (fresh)

Step 2

Peel and slice the carrots into rounds.

Step 3

In a saucepan, pour a drizzle of olive oil. Add the onion and the carrot slices. Fry for 3 minutes over medium heat.

Lentils (dry)

Step 4

Pour in the lentils. Sauté for another 2 minutes while continuing to stir. Add pepper (optional: you can add a bay leaf).

Step 5

Pour 3/4 cup of water per person*. Cook for 15 minutes over medium heat. *Check out our tips for this step

Andouille sausage (smoked)

Step 6

After 15 minutes, add the sausages (you can cut them in half) and cook for another 15 minutes covered. Add salt and pepper, it's ready!

Recipe tip

For a truly flavoursome dish, we suggest adding a dash of red wine while the lentils cook.
