Step 1

Cook the sushi rice according to the instructions on the packet. When it’s done, rinse in cold water and let it drain in a colander. Set it aside.

Salmon (raw, sushi-grade)

Step 2

Then, slice the salmon into thin strips. Do the same with the onions and set aside.

Red onion

Step 3

Slice the onions into thin strips.

Capers

Step 4

Place the rice in a bowl. Add the slices of salmon, some sliced onion, the capers.

Olive oil

Step 5

Add a drizzle of olive oil and a squeeze of lemon, salt and pepper to taste, and serve!
