Salmon (fresh)

Step 1

If you're using frozen salmon fillets, defrost by placing them in a ziplock bag and putting it in a bowl of cold water for 10 to 15 minutes. Remove the skin if you prefer.

White rice (long grain)

Step 2

Cook the rice according to pack instructions. Drain once cooked.

Coconut milk
Curry paste (green)

Step 3

In a pot, heat the coconut milk with the curry paste and bring to the boil. Add 1/4 a cup of water per person and mix.

Salmon (fresh)
Peas (fresh)

Step 4

Add the peas and salmon. Season, cover and cook on a low heat for 6 to 8 minutes, depending on the size of the salmon.

White rice (long grain)

Step 5

Check the salmon is cooked and remove from the heat.

Serve with the rice and some lime juice over the salmon if you have any, and cashew nuts (Optional: cilantro if you have any).
