Step 1
Preheat the oven to 180°C. To make the dough: add the flour, a pinch of salt and butter to a bowl. Mix, using your fingers, until you reach a sandy consistency.
Step 2
Add 75 ml of water and mix together to form a ball. Set aside.
Step 3
Cut the zucchini in thin, round slices.
Step 4
Cut the red onion and tomatoes in thin slices.
Step 5
Coupez les tomates en rondelles.

Using a rolling pin, roll out the dough on a sheet of parchment paper.
Step 7
If the dough sticks to the rolling pin, add some flour. Roll in a circle until the dough is 1/4 inch thick.
Step 8
Spread a thin layer of mustard on the dough, leaving a 2 inch border.
Step 9
Add the vegetables, salt, pepper, herbs de Provence and a drizzle of olive oil.
Step 10
Salez, poivrez, versez les herbes de Provence et un filet d'huile d'olive.
Step 11
Fold in the borders towards the center and add a drizzle of olive oil.
Step 12
