Rhubarb

Step 1

Wash the rhubarb and cut off the ends. Cut them into 4 inch sections and then cut each section lengthwise into 1/2 inch strips.

Sugar (granulated)

Step 2

In a large bowl, mix the rhubarb with 3 tablespoons of sugar and set aside. Preheat the oven to 200°C.

Flour (all-purpose)
Sugar (granulated)
Butter (salted)

Step 3

In another bowl, mix together the flour, the remaining sugar, a pinch of salt and the melted butter (15 seconds in the microwave).

Step 4

Mix the dough until thoroughly combined.

Step 5

Form the dough into a ball and place it on a piece of parchment paper. Roll it out into a circle until it’s about ¼ inch thick.

Step 6

Leaving about a 2 inch border, evenly pour the almond meal on the dough. Place the pieces of rhubarb on top of the almond meal.

Step 7

Gently fold the outer edges of the dough over the filling, overlapping if necessary, and gently pressing the creases to ensure that they are sealed.

Step 8

Optional: To give your tart a more caramelized look, sprinkle some sugar and add a few pieces of butter before baking.

Step 9

Bake for 30 minutes. It's time for a tasty treat!
