Red onion

Step 1

Heat the oven to 240°C. Cut the onions and the fennel in half, then strips.

Cut the fennel in strips.

Sausage (chipolata)

Step 3

Chop the sausages into 2-3cm pieces.

Step 4

Place the vegetables ans sausages on a tray covered with parchment or on a baking tray. Add a splash of olive oil, salt and pepper and bake for 15 minutes.

Step 5

Meanwhile, cook the pasta according to pack instructions. Once cooked, strain.

Arugula
Parmesan (grated)

Step 6

Mix the roasted sasuages and vegetables with the pasta and arugula. Sprinkle a bit of parmesan on top, season and add a bit of olive oil. Enjoy!
