Step 1
Preheat the oven to 200°C. Peel then cut the red onions into thin quarters.
Step 2
Wash then cut the zucchini in half lengthwise, then diagonally.
Step 3
Wash then cut the lemon into thin slices.
Step 4
In a baking dish, place the onions, zucchini and lemon slices. Add a drizzle of olive oil and mix well.
Step 5
Add the cherry tomatoes and the blocks of feta* cut in half. Season with salt and pepper and drizzle with olive oil. Bake for 25 to 30 minutes at 200°C. *Consult our tips for this step
Step 6
Meanwhile, in a pot of boiling salted water, cook the pasta according to package directions. At the end of cooking, drain them then keep warm.
Step 7
Once the vegetables are nicely browned, remove the dish from the oven. Serve the orzo pasta with the roasted vegetables and feta. Add a few basil leaves, if you have them, and re-season to taste. It's ready!
