Step 1

Finely chop the garlic.

Zucchini

Wash, peel and cut the carrots in small pieces. Do the same with the zucchini (around 1cm).

In a hot pan, add some olive oil, the garlic, cook for 1 minute and add the zucchini and carrots.

Step 4

Cook for 2-3 minutes then add a bit of water into the pan and simmer for 10 minutes.

Step 5

Meanwhile, make a sauce with the yogurt, lemon juice and zest, salt, pepper and 2/3 of the chopped mint.

Optional: add a bit of cumin to the veggies.

Put the wrap on a plate, add the vegetables on top, followed by the sauce and the rest of the mint and a bit of olive oil. Enjoy!
