An incredible and filling way to enjoy sweet potatoes on their own or as a side dish!

Step 1
Preheat the oven to 180°C. Wash and cut the sweet potatoes in half lengthwise.
Step 2
On a baking sheet lined with parchment paper, arrange the potato halves and the drained chickpeas.
Step 3
Season with paprika and olive oil, and then mix well. Bake for 2à minutes at 180°C. Take the chickpeas out & set aside. Put the sweet potatoes back into the oven for 25 minutes.
Step 4
Prepare the sauce while the potatoes bake. In a bowl, food processor, or blender add the avocado, yogurt, lemon juice (half a teaspoon per person), salt, and pepper.
Step 5
Mix until smooth yet still firm in texture (a bit like mayonnaise).
Step 6
Once the sweet potatoes are cooked, add about a tablespoon of the avocado sauce onto each half, and then add the roasted chickpeas on top. Optional: add fresh cilantro if desired. Enjoy!
