Red kuri squash (potimarron)

Step 1

Preheat the oven to 375°F/180°C. Wash, halve and seed the pumpkin using a soup spoon. Cut into 3-4 cm slices.

Peel and quarter the onions.

Place the squash and onion on a baking sheet lined with parchment paper or in a baking dish. Drizzle with olive oil, season with salt and pepper and bake for 40 minutes.

Mixed grains

Step 4

Meanwhile, cook the grains according to package directions. Drain and set aside.

Hazelnuts

Optional: Chop the hazelnuts.

Step 6

Remove the roast vegetables from the oven.

Serve the grains and roast vegetables topped with the crumbled goat cheese (optional: add crushed or chopped hazelnuts and fresh herbs), season with salt and pepper and drizzle with olive oil. Can be served hot or cold.
