Ingredients

Butternut squash

Step 1

Preheat the oven to 200°C. If you wish, peel the squash. Slice it in half & empty out the seeds. Dice the squash.

Mixed grains

Step 2

In a pot of salted boiling water, add the mixed grains. Cook according to package instructions. Once coked through, drain the mixed grains.

Step 3

At the same time, in a second pot of salted boiling water, add the squash. Pre-cook for 3-4 min.

Andouille sausage (smoked)

Step 4

Meanwhile, slice the sausages into rounds.

Red onion

Step 5

Peel & quarter the onions.

Spinach (fresh)

Step 6

After 3-4 min, add the spinach to the pot with the squash. Continue cooking for another 2 min, then drain well.

Herbes de Provence

Step 7

In an oven-proof dish, add : the squash, spinach, onions, sausage & mixed grains. Season with salt, pepper & 'herbes de Provence'. Add a drizzle of olive oil & mix. Roast in the oven for 25 min at 200°C.

Step 8

Once the veggies are golden & cooked through, remove the dish from the oven. Serve in a plat with a side of green salad & enjoy !
