Step 1
Preheat the oven to 220°C. Peel & slice the shallots into thin rounds.
Step 2
In an oven-proof dish, add a couple pieces of butter. Lay the roast beef over the butter & top with a couple more pieces of butter & the sliced shallots. Season with salt & pepper & bake in the oven for 10 min at 220°C.
Step 3
Meanwhile, in a pot of salted boiling water, add the green beans. Cook for 12 min, over medium heat.
Step 4
After 10 min, remove the dish from the oven & baste the roast beef with the pan drippings (count approx half an hour per 500g of beef).
Step 5
Once cooked through, drain the green beans & keep warm.
Step 6
Once nicely browned, remove the roast beef from the oven. Cut & remove the strings, then slice the roast beef.
Step 7
Serve the roast beef with the green beans. Top with the shallot butter & re-season to taste. Enjoy !
