Step 1

Whip the cream (make sure its very cold) using an electric mixer. Add half the sugar (about 1 tablespoon per person). Add the yogurt and mix again. Tip: Place the bowl in the fridge or freezer for a little while so the bowl is cold too!

Cut the apricots in half and remove the pits.

Add a dab of butter and the rest of the sugar (1 tablespoon per person) to a pan on medium heat. Add the apricots.

Step 4

Cook for 4 minutes on each side until golden. Make sure the caramel doesn't burn! Add more butter if necessary.

Cilantro (fresh)

Step 5

Serve the apricots with the whipped cream. Top with some cookie crumbles and a few cilantro leaves. Enjoy!
