Stovetop, Oven, Parchment paper, Frying pan

Eggplant

Step 1

Preheat the oven to 200°C. Wash & slice the eggplant into 1 cm-thick rounds.

Garlic

Step 2

Peel & thinly slice the garlic.

Step 3

On a parchment paper lined sheet tray, arrange the eggplant slices. Season with salt & pepper. Top with the garlic & a drizzle of olive oil. Roast for 30 min at 200°C.

Pine nuts

Step 4

Meanwhile, toast the pine nuts in a hot dry pan for a couple of minutes, until golden. Set aside.

Basil (fresh)

Step 5

Wash & mince the basil.

Step 6

Once golden & cooked through, remove the eggplant from the oven.

Burrata

Step 7

Serve the eggplant in a plate with the pieces of burrata & fresh basil. Re-season to taste & top with the toasted pine nuts. Enjoy !
