Step 1

Preheat the oven to 220°C/425°F. Wash, drain and finely chop the peppers. Peel and mince the onions.

In a frying pan, add a drizzle of olive oil and brown the vegetables over high heat for 5 minutes, stirring regularly.

Break the eggs into a bowl, (optional: add chopped coriander), season with salt and pepper, and whisk together.

Once the vegetables are cooked, pour them into an oiled pan.

Pour the eggs over the vegetables, sprinkle with the ricotta cheese and bake for 10 to 15 minutes. Serve with a green salad, and it's ready!
