Step 1

Cook the rice according to the instructions on the package. Once cooked, strain and set aside to cool.

Red onion

Step 2

Cut the avocado in cubes. Finely mince the onion.

Step 3

Add the rice to a plate and top with the spinach, avocado, red onion and shrimp.

Chives (fresh)

Step 4

Add a drizzle of olive oil, lime juice and season with salt & pepper. Optional: add chopped chives. Enjoy!
