Zucchini

Step 1

Wash & dice the zucchini into cubes.

Egg
Soy sauce

Step 2

Break the eggs into a bowl. Add the soy sauce & pepper. Whisk everything together.

Step 3

Heat a drizzle of olive oil in a pan over low heat. Add the egg mixture & cook, mixing gently with a spatula. The eggs should remain a little runny, not overcooked. Reserve off the heat.

Step 4

Heat a drizzle of olive oil in a saucepan or Dutch oven over medium heat. Add the zucchini. Add salt & pepper. Cook for 5-6 min.

Step 5

Pour in the hot water, cover & simmer for 10 min.

Precooked noodles (ramen)

Step 6

Add the noodles to the pan with the zucchini. Mix well, add the seasoning packet & mix again. Cook for another 2-3 min.

Nori sheets (roasted seaweed)

Step 7

Serve the noodles, veggies & broth in a bowl. Add the scrambled eggs and the nori cut into thin strips. Re-season to taste, serve & enjoy!
