Stovetop, Pot (small), Peeler, Colander
Step 1
Peel & slice the carrots into thin rounds.
Step 2
In a pot of salted boiling water, add the carrots. Cook for 12 min.
Step 3
Meanwhile, wash & slice the broccoli into florets. Slice in halves or quarters, depending on their size.
Step 4
After 12 min, add the broccoli florets into the pot with the carrots. Continue cooking for 7 min.
Step 5
Meanwhile, in a second pot of boiling water, cook the eggs for 6 min. Plunge them in a bowl of cold water to cool down & stop the cooking process. Delicately peel the egg shells & set aside.
Step 6
Meanwhile, prepare the grains according to package instructions.
Step 7
Once cooked through, drain the veggies. Set the brocoli aside.
Step 8
Prepare the carrot mash. In a large bowl, add : the drained carrots, cumin, a drizzle of olive oil, salt & pepper. Using a fork or potato masher, mash the carrots. Add a dab of butter (optional) & stir.
Step 9
In a plate, serve the cumin carrot mash with the grains, broccoli & poached eggs cut in half. Re-season to taste & enjoy !
