Quinoa

Step 1

Cook the quinoa according to the instructions on the package. Rinse the quinoa under cold water if you have a fine strainer If not, spread it out onto a plate to allow it to cool quickly.

Strawberries

Step 2

While the quinoa is cooking, wash the strawberries, remove the leaves and cut them into quarters.

Balsamic vinegar

Step 3

To make the vinaigrette, mix together the vinegar, salt, pepper and 1 tablespoon of olive oil per person.

Step 4

In a large bowl, mix together the quinoa, arugula, strawberries, crumbled feta cheese and the vinaigrette. A delicious, healthy salad ready in a jiffy! Enjoy!
