Revisit tofu with this delicious bowl of strir-fried quinoa & veggies !
Stovetop, Frying pan
Step 1
Slice the tofu into small cubes.
Step 2
In a wide bowl, add the cornstarch & toss the tofu to evenly coat.
Step 3
Heat a drizzle of olive oil in a pan, over medium heat. Add the cubed tofu & cook for 5 minutes, until lightly golden. Set aside.
Step 4
Meanwhile, if using, wash & thinly slice the scallion. Separate the white & green pieces.
Step 5
Heat a drizzle of oil in the pan, on medium heat. Add the white parts of the scallion & sauté for 1 min.
Step 6
Add the mixed vegetables to the pan, stir & cook for 3-4 min, stirring occasionally.
Step 7
Meanwhile, prepare the quinoa according to package instructions.
Step 8
Reduce to low heat & add the cooked quinoa & reserved tofu back to the pan. Pour the teriyaki sauce in & stir well. Cook for another 1-2 min, while stirring.
Step 9
Serve the stir-fried tofu quinoa in a plate. Top with the remaining sliced scallions & re-season to taste. Enjoy !
