Stovetop, Frying pan

Cooked shrimp (frozen)

Step 1

If using frozen shrimp, defrost completely. Peel the shrimp if needed.

Green onion (scallions)

Step 2

If using, wash & thinly slice the scallion. Separate the white & green pieces.

Step 3

Heat a drizzle of oil in a pan over medium heat. Add the white parts of the scallion & sauté for 1 min.

Mixed vegetables (frozen)

Step 4

Add the mixed vegetables to the pan. Stir & cook for 2-3 min.

Teriyaki sauce

Step 5

Add the shrimp & half of the teriyaki sauce to the pan. Stir & cook until the shrimp is mostly pink, about 3-4 min.

Quinoa (cooked)

Step 6

Meanwhile, prepare the quinoa according to package instructions.

Step 7

Reduce to low heat & add the cooked quinoa to the pan. Pour the remaining teriyaki sauce in & stir well to combine.

Step 8

Serve the stir-fried shrimp quinoa in a plate. Top with the remaining sliced scallions & re-season to taste. Enjoy !
