Cooked shrimp (frozen)

Step 1

If using frozen shrimp, defrost completely. Peel the shrimp if needed.

Soy sauce
Honey
Garlic

Step 2

Prepare the honey/soy sauce. In a bowl, combine : the soy sauce, honey & grated garlic.

Mixed vegetables (frozen)

Step 3

Heat a drizzle of oil in a pan, over medium heat. Add the mixed vegetables & cook for 2-3 min, stirring.

Step 4

Add the shrimp & half of the honey/soy sauce to the pan. Stir & cook until the shrimp is mostly pink, about 3-4 min.

Quinoa (cooked)

Step 5

Meanwhile, prepare the quinoa according to package instructions.

Step 6

Reduce to low heat & add the cooked quinoa to the pan. Pour in the remaining sauce & stir well to combine.

Step 7

Serve the stir-fried shrimp quinoa in a plate. Top with the sliced scallions, if you have some & re-season to taste. Enjoy !
