Step 1
Cook the quinoa according to the instructions on the package.
Step 2
In the meantime, wash and cut the cucumber into small cubes.
Step 3
Cut the avocado in half, and remove the pit and the skin. Cut into thin slices.
Step 4
In a shallow dish, add the quinoa, cucumber, hummus and avocado. Add some fresh parsley (optional) and the dressing of your choice. Enjoy!
