Step 1
Cook the quinoa according to the instructions on the package (about 12 minutes).
Step 2
Peel the onion and cut into thin slices.
Step 3
In the meantime, peel the butternut squash and cut it in half (lengthwise). Using a vegetable peeler, peel the flesh to create long ribbon-like strands.
Step 4
Once the quinoa is cooked, drain and rinse it under cold water.
Step 5
In a large bowl or plate, add the quinoa, butternut squash ribbons, lettuce, onions and crumbled feta.
Step 6
Season with salt and pepper, add olive oil and the vinegar of your choice. Mix together and enjoy!
