Step 1
Prepare quinoa according to package directions.
Step 2
Meanwhile, wash and cut the tomato into small cubes.
Step 3
Wash and cut the cucumber into small cubes.
Step 4
Peel then finely slice the red onion.
Step 5
Wash then finely slice the mint.
Step 6
In a salad bowl, add: quinoa, tomato, cucumber, red onion and mint.
Step 7
Add the lemon juice and a drizzle of olive oil. Salt, pepper and mix everything. Crumble the feta on top and mix again.
Step 8
In a deep plate, serve the quinoa tabbouleh with a sprig of mint and a thin slice of lemon. It's ready !
