For those evenings when you can't be bothered, here's a recipe that's ready in 3, 2, 1 !
Mixing bowl, Stovetop, Pot (small)
Step 1
In a pot of salted boiling water, cook the rice according to package instructions. Once cooked through, drain the rice & set aside.
Step 2
Meanwhile, prepare the marinade. In a bowl, combine : Half of the soy sauce & Half of the rice vinegar.
Step 3
If needed, remove the skin from the salmon. Cut the salmon into cubes.
Step 4
Put the salmon in the marinade. Coat it evenly & chill for 10 minutes.
Step 5
Wash & slice the cucumber into rounds.
Step 6
Peel & cut the avocado into thin slices.
Step 7
Wash & thinly slice the radishes.
Step 8
Once cooked & drained, add the remaining soy sauce & rice vinegar to the rice. Mix to combine.
Step 9
In a bowl, serve the rice with the salmon, avocado, cucumbers & radishes. Top with the remaining marinade & fresh cilantro, if you have some. Enjoy !
