Pot (small), Stovetop, Frying pan

White mushrooms (whole)

Step 1

Clean & slice the mushrooms into rounds.

Egg

Step 2

In a pot of boiling water, cook the eggs for 6 min. Place the eggs in a bowl of ice cold water to stop the cooking. Once cooled down, delicately shell the eggs & set aside.

Garlic

Step 3

Meanwhile, heat a drizzle of olive oil in a pan, over medium heat. Add the grated garlic & sauté for 30 sec, stirring.

Spinach (fresh)

Step 4

Add the mushrooms & spinach leave to the pan. Season with salt & pepper. Stir & sauté for 4-5 min.

Polenta
Milk (whole)
Parmesan (grated)

Step 5

Meanwhile, prepare the polenta according to package instructions.

Step 6

Serve the creamy polenta with the grilled veggies & poached egg. Re-season to taste & enjoy !
