Step 1

In a large pot of salted water, cook pasta according to pack instructions.

Pistachios (roasted)

Step 2

Meanwhile, shell the pistachios.

Black olives (pitted)

In a blender, add: pistachios, olives, degermed garlic, basil (keep 2 or 3 leaves for decoration), 1.5 tablespoons of olive oil per person, salt & pepper.

Basil (fresh)

Step 4

Mix it all together - the consistency should remain grainy.

Pasta (pipe rigate)

Step 5

Once the pasta is cooked through, drain and rinse with cold water. Add the olive & pistachio sauce mix well.

Step 6

Serve with a few basil leaves, if you have some left. Enjoy !
