Step 1
Preheat your oven to 210°C. Wash and cut the zucchini into long strips (using a vegetable peeler) or very thin round slices.
Step 2
Roll out the pizza dough on a baking sheet lined with parchment paper and spread the pesto, leaving a small border around the edges.
Step 3
Add the zucchini and mozzarella, a drizzle of olive oil, salt & pepper. Bake for 15 minutes or until golden brown.
Step 4
Remove from the oven and top with a handful of fresh spinach. Enjoy!
