Pasta (linguine)

Step 1

Cook pasta according to package directions, about 10 minutes in boiling salted water. Before draining the pasta, keep a small ladle of cooking water aside for each serving.

Basil (fresh)
Pine nuts
Garlic
Olive oil

Step 2

Meanwhile, make the pesto. In the bowl of a blender, add the pine nuts, basil leaves, peeled garlic, olive oil and a pinch of salt. Blend until you obtain a smooth pesto.

Cherry tomatoes

Step 3

Cook the cherry tomatoes in a hot pan with a drizzle of olive oil. Cook for 3 minutes on high heat. Cover the pan and continue cooking for 3 minutes on low heat.

Step 4

Add the pasta, the reserved cooking water, the pesto and mix everything together. Let cook for 1 minute on low heat.

Mozzarella (buffalo)

Step 5

Serve in plates, add the mozzarella on top, add a drizzle of olive oil, sprinkle with basil leaves if you have any left, salt and pepper, and it's ready!
