Olive oil (1 tbsp)

Step 1

Boil water in a large pot. Add a pinch of salt.

Broccoli (fresh)

Step 2

Wash & cut the broccoli into florets. Slice the larger florets in half & the stem into small cubes. Add them to the boiling water & cook for 7-8 min, or until fork tender.

Pesto

Step 3

While the broccoli is cooking, thin out the pesto with 1 tablespoon of olive oil per person, salt and pepper.

Step 4

Once the broccoli is cooked, drain and rinse under cold water to stop the cooking.

Burrata

Step 5

In a large bowl, mix the broccoli with the pesto and add the burrata (or mozzarella) in shreds. Let's eat!
