Thermomix, Peeler
Step 1
Place the peeled onions, carrots and garlic in the Thermomix and mix 5 sec/speed 5. Scrape the sides of the bowl with the spatula. Add a drizzle of olive oil and sauté for 2 minutes/120°C/speed 1.
Step 2
If you have a fine colander, wash the quinoa to remove any bitterness.
Step 3
In the bowl, with the vegetables, add 1 cup of water/person, the tomato flesh and the quinoa, salt and pepper.
Step 4
Cook for 20 minutes/100°C/reverse direction/ simmer speed (with measuring cup).
Step 5
Once the cooking is finished, adjust the seasoning according to taste. Serve the soup, add the crumbled feta cheese on top (optional: and parsley, if you have any). Enjoy!
