Oven, Baking dish
Step 1
Preheat the oven to 200°C. Peel the onions then cut them into strips.
Step 2
Wash the peppers, cut the tops then remove the center with the seeds. Then cut the peppers into strips.
Step 3
In a dish, add: the peppers, onions, herbes de Provence, salt, pepper and a drizzle of olive oil.* Stir to combine & roast in the oven for 30 minutes at 200°C. *Check out our tips for this step
Step 4
After 20 minutes of cooking, remove the dish from the oven. Dig small wells, crack the eggs and add them to the wells. Season with salt and pepper then put in the oven again for 6 minutes at 200°C.
Step 5
At the end of cooking, add chopped parsley if you have any. It's ready !
For a truly flavoursome dish, we suggest adding mushrooms, tomatoes or chickpeas, depending on the season !
