Pistachios (roasted)

Step 1

Preheat the oven to 180°C. Wash the pears and cut them into thin strips. Shell the pistachios and crush them.

Goat's cheese
Rosemary (dried)

Step 2

Place the goat cheese in a bowl, season. (Optional: add rosemary/thym) Mix together.

Phyllo pastry sheet

Step 3

Gently detach the pastry sheets. Use 1 sheet of pastry per person.

Step 4

Lay out on sheet on a flat surface, add in the center: pears, goat cheese, pistachios, salt, pepper. Fold in the pastry to form a square.

Honey

Step 5

Place pastry squares on a baking sheet lined with parchment paper. Lightly oil the bricks using a brush or your fingers. Finish with a drizzle of honey and bake at 375°F for 15 minutes.

Spring mix lettuce

Step 6

Once the squares are golden, remove them from the oven and serve with a seasoned salad.
