Peas (frozen)

Step 1

Cook the peas in a pot of boiling water for 8 minutes. Strain and set them aside. Meanwhile, sauté the shallots over medium-high heat for 3-4 minutes.

Coconut milk
Mild chile powder, ground (Espelette)

Step 2

Add the peas to the shallots and enough water to cover them. Take off the heat and add the chopped mint, coconut milk, chili powder, salt & pepper. Blend until smooth and enjoy!
